Robinson spoke excitedly about his new jerk chicken recipe
There was a time when James “Big Man” Robinson of Staples Street NE used to just place plain meat or poultry on his backyard grill before firing the charcoals. But now Mr. Robinson, age 30, marinates chicken, lamb, or sometimes a piece of swordfish or salmon in a blend of allspice, lime, thyme, cinnamon, jalapeno, white pepper, and other secret herbs and spices.
“But one little secret ingredient I’ll let you in on is a splash of dark rum,” said Robinson.
Mr. Robinson also added that “his lady friend” isn’t doing much meat these days and he was willing to try the rub on a vegetable kebob of onions, red peppers, tomato, eggplant, and zucchini.
“I think it could be really tasty,” he said.
